Jambalaya

Ingredients

1 link of Aidells Cajun Style Andouille sausage (gluten & nitrites free)
2 cooked chicken breasts
1 chopped green or red pepper
1 can plain diced tomatoes
1 can Rotel no salt added diced tomatoes and green chilies
2 cups cooked brown rice.

Directions

Heat skillet and add sausage & pepper and cook through. Transfer to a larger pot and add the chicken, cans of tomatoes & rice. Bring to a boil, reduce heat and simmer for 10 minutes.
