Salad:
2 cups leafy greens, ½ cup each red bell peppers, string beans and shredded purple cabbage, 1/4 cup shredded carrots, 1 tablespoon almond slivers.
Raisin Quinoa:
½ cup cooked quinoa, 1 tablespoon raisins, 1 teaspoon cinnamon; 4 ounces grilled chicken breast, sprinkle of Parmesan, 1 teaspoon olive oil and juice of lemon or flavored vinegar to taste.
